"Taking the First Step" Parmiggiano and Herb Frittata

My own first step in overcoming heartache was to make something as a tribute to my Nonna, her famous parmiggiano and herb frittata. As I stood over the stove, I heard her voice saying, "Dante, the heart and stomach are connected. When your heart hurts, take care of your stomach and you'll always be well." I looked up and thanked my Nonna for reminding me and I immediately began to feel better.

This is a simple recipe. I chose to make it the first recipe in this cookbook because it can be eaten at any time of day and it's a good recipe to help you take the first step. If you're trying to overcome a broken heart, I want you to make this dish as soon as you can. Don't wait any longer. Gather up the ingredients, go to the store if you must. This is that "something for yourself" and when you're making this delicious little meal, be mindful that you're nurturing your body, your soul, your heart. And when you put the first bite into your mouth, know that you have taken that first step toward healing your heartache.

Ingredients
  • 9 eggs, beaten
  • 1/4 cup of freshly grated parmiggiano reggiano (or similar hard cheese such as asiago or romano)
  • 1/4 cup bread crumbs
  • 2 Tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • red chili flakes to taste (optional)
  • 3 Tbsp of olive oil

Preparation
  • Preheat the oven to 350 degrees F.
  • Add oil to a large skillet and heat over medium high heat for two minutes.
  • Whisk the eggs, add cheese, herbs, salt, pepper, chili flakes and breadcrumbs in a large bowl
  • Pour the egg mixture into the skillet and reduce the heat to medium. Cook for 2 to 3 minutes.
  • Place the skillet into the top half of the oven and cook until the center of the frittata is set, about 10 to 12 minutes.
    Transfer the frittata from the skillet to a serving plate and cut into wedges. Garnish by grating some fresh pamiggiano over the top if you like. You can also add a little fresh chopped basil if you have it.
